Roro's Nutty Brownies

Ingredients

1 bar of cooking chocolate
1 cup of butter
5 eggs
3 cups of caster sugar - lessened if you want less sweet
1 tsp of vanilla
1 1/2 cups of flour
2 cups  of walnuts / hazelnuts / pecan nuts, coarsely chopped

1. Spread nuts onto baking pan and bake for 10 mins, for crunchiness
2. Melt chocolate and butter over low heat, stirring until everything meltsas
3. Set aside melted chocolate to cool
4. Beat eggs and butter for 10 minutes at high speed, or until mixture becomes white
5. Add in melted chocolate, beat for 5 mins at medium speed
6. Add in flour little by little, beating until fine
7. Add in vanilla, beat
8. Add in nuts, mixing well

Preheat oven at 190 c / 375 F
Grease 12x9 inch pan with butter or line with baking paper.
Pour mixture into pan, spreading well.
Bake for 35 mins or more

Cornflakes Raisin Cookies

Ingredients

500gms butter
2 cups of caster sugar
1 cup flour
3 cups self-raising flour
2 cups coarsely chopped raisins
4 egg yolks
2 tsp vanilla essence
Cornflakes

1. Beat butter and sugar until fine
2. Drop in egg yolks one by one, beating until mixing well after each drop
3. Sift flour and self-raising flour into mixture, beating until everything mixes well
4. Add in vanilla essence, beat it
5. Mix in raisins until finely spread
6. Roughly break the cereal into small pieces.
7. Roll a teaspoonful of mixture with cornflakes. Put into small paper cups.
8. Bake at 170 celcius for 15 minutes.

*this makes around 200 pieces



Kuih Sarang Semut


Ingredients

1 cup of icing sugar
250gms of butter
2 egg yolks
2 cups of self-raising flour
1/2 cups of fine flour
1 tsp vanilla essence
Chocolate rice

1. Beat sugar and butter well
2. Add in egg yolks one by one, beat until mixed well
3. Add in self-raising flour and flour, little by little, beat
4. Add in vanilla essence

Roll a teaspoonful of mixture into small paper cups, pressing a bit.
Pour a layer of chocolate rice on top.

Bake at 170 celcius for 15 mins.
Put out to cool before packaging.
